Black lava salt, prized for its striking appearance and subtle flavour, is primarily used as a gourmet finishing salt to add visual appeal and a delicate smoky, earthy flavour to a wide range of dishes. It is often described as tasting slightly smoky, earthy, and mineral-rich, while the dominant flavour is still saltiness. 

Black Lava salt is excellent on grilled steaks, roasted chicken, and even cured meats like prosciutto. The salt’s mineral content can also help to tenderize meat.

Called Black Cap Pudding in some parts of the country as the blackcurrant jam looks like a luscious cap over the top of the pudding when it is turned out, it was originally a thin batter pudding with currants which sank to the bottom - hence black cap - it has evolved into the sponge pudding we know today.
