Marinated Goats Cheese Dip

 

Ingredients

  • 300g (11 oz) spreadable Goats Cheese
  • 80ml (3 fl oz) olive oil
  • 2-3 tablespoons balsamic vinegar
  • Leaves from 1 sprig of fresh thyme
  • 10 x large pitted black olives, cut into 3
  • 2 cloves of garlic, crushed
  • Roots & Wings Coarse Sea Salt
  • Black pepper
  • Zest of half a lemon
  • ¼ teaspoon chilli flakes
  • Roots & Wings Organic Brittles with Black Olives & Sundried Tomatoes

Method

First make the marinade. In a small bowl combine the thyme, garlic, salt, pepper and chilli flakes with the olive oil and whisk. Then mix in the balsamic vinegar, lemon zest and black olives.

Spread the goat cheese into a shallow dish and make a well in the middle. Spoon over the marinade and if possible, let it sit for a few hours. Before serving garnish with more herbs. It’s wonderful with Roots & Wings Organic Brittles with Black Olives & Sundried Tomatoes.
