Method:
Put 12 greased muffin cups into a bun tray. Heat the oven to 180C/ 356F/ Gas 4. Put the flour into a large bowl and add the sugar, baking powder and salt. In a separate bowl beat the eggs then add the milk, melted butter and lemon zest and stir. Pour onto the dry ingredients and mix until combined. Half fill one muffin cup with the batter then add a heaped teaspoon of jam. Add the batter on top and repeat until all the muffin cups are full. Bake in the oven for 20-25 minutes until golden then leave to cool on a wire tray. Don’t eat while hot as the jam may burn your tongue!
