Sticky Pork Ribs with Marmalade Glaze

 

 

Ingredients

  • 1 rack of meaty pork ribs, about 1 kilo (2 lbs 2 oz) 
    Marmalade Glaze: 
  • 110g (4 oz) Roots & Wings Organic Seville Marmalade
  • 1 garlic clove, peeled and crushed
  • ½ tsp cayenne pepper
  • 1 tsp dried sage
  • 2 tsps Dijon mustard
  • 1 tablespoon tomato puree
  • 2 tablespoons orange juice
  • Salt and pepper

Method

Mix together the ingredients for the marmalade glaze. 
Heat the oven to 180C/356F/Gas 4. 
Put some foil into the bottom of a roasting pan and place the ribs on top. Roast for 60 minutes then remove from the oven.
Brush the ribs with the glaze and then place on the barbeque. Brush with the glaze frequently then turn the ribs over and brush with the glaze again. The ribs should be finished after about 20 minutes. 
If you don’t want to barbeque glaze the ribs then put them back into the oven for 10 minutes. Turn them over and glaze again and cook for another 10 minutes.
