Quinoa Salad with Bee Pollen

 

Ingredients

  • 370g (13 oz) cooked quinoa
  • 180g (6 oz) diced cucumber
  • 180g (6 oz) red pepper diced
  • 58g (2 oz) feta cheese, crumbled
  • 10 cherry tomatoes halved
  • 1 tablespoon Roots & Wings Organic Bee Pollen
  • 2 tablespoons good olive oil
  • Roots & Wings Coarse Sea Salt 
  • Black pepper

Method:

Serves 2

In a bowl mix the quinoa with the cucumber, red pepper and the feta cheese. Stir in the tomatoes. Sprinkle over the bee pollen, a pinch of salt and a grind of black pepper.  Then drizzle the olive oil over the salad and mix gently together.
