Sweet Potato, Cranberry, Pear & Goats Cheese Rounds

 

   

Ingredients

  • 2 Sweet Potatoes
  • Organic Olive Oil
  • 100g (4 oz) Goats Cheese
  • 1 pear, thinly sliced
  • Fresh Thyme
  • 100g (4 oz) Walnuts
  • Roots & Wings Organic Cranberry Sauce with Orange & Spices 

Method:

Makes about 20 rounds.

Preheat the oven to 180°C / 350°F / Gas Mark 4. 
Slice the sweet potato into 1cm (just under ½ inch) thick rounds. Put on a baking tray and brush both sides with the oil. Bake for 15 mins, turn the slices over and return to the oven for another 15 minutes, or until the sweet potatoes are lightly browned. Allow them to cool. 

To assemble: spread a layer of goats cheese onto a sweet potato round, add a spoonful of Cranberry Sauce, top with a few slices of pear, a walnut and a sprinkle of thyme.
