Avocado on Toast with Tomato Salsa & Bee Pollen

 

 

Ingredients:

  • 2 slices of bread
  • 1 avocado
  • Lemon juice, optional
  • 2 dessertspoons of cream cheese
  • 2 ripe tomatoes, diced
  • ½ shallot diced finely
  • 1 teaspoon red wine vinegar
  • Roots & Wings Coarse Sea Salt
  • Black pepper
  • Small handful fresh basil leaves, coarsely chopped
  • ½ teaspoon fresh chilli finely chopped
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons Roots & Wings Organic Bee Pollen

Method:

First make the salsa. Put the tomatoes, shallot, red wine vinegar, basil, chilli and salt into a bowl. Grind over some black pepper then stir in the olive oil. Mix gently but well.
Toast the bread then spread over the cream cheese. Peel and cut the avocado into slices or you can mash it if you prefer. Sprinkle with a little lemon juice if needed to stop the avocado going brown. Spoon some salsa over the top of the avocado and then sprinkle one teaspoon of bee pollen on top of each slice.
