Lemon Loaf Cake

 

Ingredients:

  • 140g (5oz) self-raising flour
  • 120g (4oz) butter
  • 120g (4oz) sugar
  • 2 generous dessertspoons of Roots & Wings Organic Lemon Curd
  • 1 teaspoon baking powder
  • 2 eggs
  • Zest and juice of a lemon
  • Drop of milk (optional)

Method:

First preheat the oven to 180C/350F/Gas 4.
Line a loaf tin with parchment paper or use a loaf liner.
Put all the ingredients into a bowl and mix well using an electronic mixer. If it is a bit thick loosen with a drop of milk.
Put the cake mix into the tin and bake in the oven for 30 -35 minutes until the cake bounces back to the touch and a skewer comes out cleanly. If the cake needs longer put some parchment paper over the top to stop it browning too much.
When cooked put on a wire rack and leave to cook in the tin.
