Marmalade Bread & Butter Pudding





  • 8 slices of white bread or brioche
  • 100g (3 ½ oz) butter, plus extra for greasing
  • 200g (7 oz) Roots & Wings Organic Seville Orange Marmalade
  • 50g (2 oz) sultanas
  • 4 eggs
  • 50g (2 oz) sugar
  • 500 ml (18 fl oz) milk
  • 100 ml (3 ½ fl oz) single cream
  • Nutmeg
  • 50g (2 oz) demerara sugar


Heat the oven to 170C/ 338 F/ Gas 3. Grease a 2 litre oven dish. Spread the butter on one side of the bread or brioche then spread the marmalade onto each piece. Cut each slice into four triangles. Lay in the oven proof dish, overlapping the triangles.
Grate some fresh nutmeg over the bread then mix the eggs with the milk and cream and pour over. Sprinkle the demerara sugar over the top and then cook in the oven for about an hour until the top is crunchy.
