Method:
First make your granola. This recipe makes 8 servings.
Heat the oven to 160C/325F/Gas 3. Line a large flat baking sheet with parchment paper. Put all the granola dry ingredients into a large bowl and mix. Heat the butter in a pan and add the sugar, honey and salt. Bring to the boil then remove from the heat and stir in the vanilla extract and baking soda. Pour butter and sugar mixture over the granola ingredients and stir well so that everything is coated. Spread onto the baking sheet and press down with the back of your spoon. Put into the oven and bake for 8 minutes. Remove from the oven and stir the mixture thoroughly then flatten again. Put back into the oven for 8-12 minutes until golden brown. Remove from the oven and leave to cool on a wire tray. Do not break the mixture up until it is completely cool as this is how the clusters form. Once cool break up and store in an airtight container.
Yoghurt Breakfast Bowl
Put 3 tablespoons of Greek Yoghurt into a bowl and add 2 good tablespoons of homemade granola. Toss on some fresh berries and sprinkle over some bee pollen.
