Marmalade Pork Chops

 

Ingredients:

  • 1 tbsp olive oil
  • 4 pork loin steaks
  • 8 fresh sage leaves (optional)
  • 200ml (7 fl oz) chicken stock
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 4 tbsp Roots & Wings Organic Marmalade
  • Salt and pepper

Method:

Heat the oil in a frying pan and add 2 of the pork steaks the pork to the pan. Cook until golden on each side then remove from the pan and put to one side while you cook the other two pork steaks. If you put them all in together the meat will boil rather than fry. When they are cooked, remove from the pan and place them on the plate with the other two steaks. Season well with salt and pepper. Pour off the oil from the frying pan and wipe it with a paper towel.
Add the dried thyme and sage to the stock and then stir in the marmalade. Pour the stock and marmalade mixture into the pan and bring to a low simmer. Return the pork to the pan and bring back to a simmer Check that the pork is cooked through and then serve with the sauce and a couple of fresh sage leaves on top of each steak.
