Apricot Glazed Pork Ribs

 

Ingredients:

  • 454g (1 lb) pork ribs
  • 140g (5 oz) Roots & Wings Organic Apricot Jam

  •  

    1 ½ tablspooons soy sauce

  •  

    1 tablespoon light brown sugar

  •  

    1 garlic clove peeled and chopped

  •  

    Salt and black pepper

Method:

It is better to prepare these the day before so that the ribs marinade, but if you haven’t got that much time marinade the ribs for as long as you can and they will still taste good.
Place the ribs in a large dish.
Whisk together apricot jam, soy sauce, brown sugar, and garlic powder then pour over the ribs. Cover with cling film and put in the fridge overnight or for as long as you can.
When you are ready to cook, heat the oven to 165C/329F/Gas 3.
Line a roasting dish with foil.
Remove ribs from the marinade and put them in the roasting tin. Season and put in the oven.
Meanwhile put the marinade into a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes then set aside.
Baste the ribs with the cooked marinade frequently until ribs are tender and meat pulls away easily from the bone, about 1 hour 30 minutes.
Serve with jacket potatoes which can cook in the oven at the same time as the ribs and a salad.
