Lemon Curd Parfait




  • 10 digestive biscuits
  • 2 tablespoons unsalted butter, melted
  • Roots & Wings Organic Beautifully Smooth Lemon Curd
  • 200ml (7 fl oz) Greek Yoghurt
  • 200ml (7 fl oz) Whipping cream
  • Mini chocolate Easter Eggs


Serves 4

Start by making your biscuit base. In a bowl smash up the biscuits with a rolling pin into a coarse crumb, then stir in the butter. Divide up the crumb into the base of glasses and pop a teaspoon of lemon curd on top.

Next, in a bowl whisk the whipping cream until light and fluffy. Fold in the Greek yoghurt and 3 large tablespoons of lemon curd and then divide the mixture up between the glasses. Top with the remaining biscuit crumb, add a little more lemon curd and top with mini Easter Eggs.
