Method: Serves 4 Put half of the strawberries in a bowl with the lemon zest and 1 tablespoon of lemon juice. Mash the other half of the strawberries with a fork and allow to macerate and steep a little, for about 10 minutes.
Chop up the pistachios and set aside. Take a bowl and crush each meringue, you can easily crush them in your hand but if you do this over a bowl it will catch the shards of meringue. Put to one side. Whip the double cream to stiff peaks then fold in the mashed strawberries, half of the pistachios and half of the meringues.
Take 4 small serving dishes or glasses. Layer the berry cream with the remaining quartered strawberries, meringues and pistachios. Repeat then top each portion with a teaspoonful of bee pollen and serve right away.
