Cool Cucumber Drink

 

Ingredients: 

      For the Mint Syrup

  • 200g (7 oz) sugar

  • 8g (3 oz) mint leaves

  • 350ml (12 fl oz) water

  •  

     

    For the Cool Cucumber Drink

     

  • 300g (10 ½ oz) cucumber, peeled and cubed, plus some strips to decorate (optional)
  • 2 tsp lemon juice
  • 2 tbsp mint syrup
  • 120 ml (4 fl oz) water
  • 1/2 tsp Roots & Wings Kala Namak Salt
  • 2 tbsps crushed ice

Method:

Makes 2 glasses

First make the mint syrup. This can be made well ahead of time and stored in the fridge for up to 10 days. Begin by combining the mint leaves, sugar and water in a pan and cook on a low heat for 30 minutes, stirring occasionally. Strain the mixture, discarding the leaves. Cool and store in a bottle in the fridge.
When you are ready to make the Cool Cucumber drink put the cucumber, lemon juice, mint syrup and black salt in a blender together with the Kala Namak Black Salt and whizz until smooth.
Put a tablespoon of crushed ice in the bottom of a glass and pour in the cucumber mix. Repeat. Decorate with the strips of cucumber if using.
