Ingredients: For the Mint Syrup

Method: Makes 2 glasses First make the mint syrup. This can be made well ahead of time and stored in the fridge for up to 10 days. Begin by combining the mint leaves, sugar and water in a pan and cook on a low heat for 30 minutes, stirring occasionally. Strain the mixture, discarding the leaves. Cool and store in a bottle in the fridge.
