Cheat's Strawberry Shortcake

 

 

Ingredients

  • 300g (10 oz) strawberries, hulled and cut in half
  • 1 heaped tbsp caster sugar
  • Pinch of salt
  • 1 tbsp balsamic vinegar
  • 110ml (4 fl oz) double cream or crème fraiche
  • Roots & Wings Organic All Butter Shortbread Biscuits

Method:

Preheat the oven to 190°C/374F/Gas 5. 
Line a baking tray with foil.
Put the strawberries in a bowl with the sugar, salt, and balsamic and mix them carefully then spread them out on the tray.
Roast for 15 minutes. The berries should look glossy and syrupy but still hold their shape.
Whip the cream to soft peaks. 
Put a dollop of cream on top of a shortbread biscuit, add some strawberries and eat straight away.
