Whipped Feta with Bee Pollen & Honey

 

 

Ingredients:

  • 115g (4 oz) feta cheese
  • 115g (4 oz) cream cheese
  • 1 tablespoon organic olive oil
  • 1 garlic clove, finely diced
  • 60g (2 oz) honey
  • 1 tablespoon  pistachios, shelled and chopped
  • 1 tablespoon  chives, chopped
  • 1 teaspoon Roots & Wings Organic Bee Pollen
  • Pink pepper corns, crushed
  • Ground black pepper, to taste

    To serve:
  • 1 packet Roots & Wings Organic MultiSeed Brittles Original
     

Method:

In a food processor or mixer whip together the feta, cream cheese and olive oil. Add the garlic and mix well. Then tip it out into a shallow serving bowl and use a large spoon to create a well in the centre. When you're ready to serve fill the well with honey and top with the chives, pistachio, bee pollen and the pink and black pepper. Serve with a stack of Brittles.
