Smoked Mackerel Pâté with MultiSeed Brittles

 

Ingredients:

  •  250g (9 oz) smoked mackerel fillets, skinned
  • 1 tablespoon creamed horseradish
  • 200g (7 oz) crème fraîche
  • Juice of 1 lemon
  • Salt and pepper

  • Cucumber
  • Pink peppercorns, crushed

Method:

For a smooth pate, put the mackerel, horseradish, crème fraîche and lemon juice into a food processor and whizz. For a coarser texture, simply flake the mackerel and mix in the other ingredients in a bowl. Taste the pâté and add more horseradish if you fancy a real kick and season to taste.

Next with a vegetable peeler create ribbons of cucumber. To assemble the canapés break the Brittles into bite sized pieces. Spread a teaspoonful of pâté onto each piece, twist on a ribbon of cucumber and sprinkle over some crushed pepper corns. Serve right away.
