Method:
Preheat the oven to 190C/375°F/Gas 5. In a bowl, whisk together the orange marmalade, soy sauce, olive oil, garlic and ginger. Season the chicken with salt and pepper. Add a drizzle of olive oil to a large oven safe frying pan and heat then sear the chicken for 3-4 minutes per side until golden. Pour the marmalade mixture over the chicken, making sure each piece is coated. Transfer the frying pan to the oven and bake for 15-20 minutes until the chicken is cooked through. Let the chicken rest for 5 minutes before serving.
