Marmalade Glazed Pork Tenderloin



  • 2 tablespoons organic olive oil plus a little extra
  • 2 tablespoons organic light soy sauce
  • 4 tablespoons Roots & Wings Organic Seville Marmalade
  • 2 cloves garlic, peeled and chopped
  • 1 small red chilli, deseeded and chopped
  • 2 pork tenderloins approx 400g each (14 oz)


Serves 4

Preheat the oven to 200C/392F/Gas mark 6.

Mix together the 2 tablespoons of the olive oil with the soy sauce, marmalade, garlic and chilli. Place the pork in a shallow dish and spoon over the marinade, turning the pork to coat thoroughly. Cover, and chilli in the fridge for 2 hours.

Heat a little oil in a roasting tin. Lift the pork from the marinade, but keep the marinade.Place the pork in the roasting tin and roast for 15-20 mins. Remove from oven, spoon the marinade over the pork and return to the oven for a further 5-7 minutes to glaze. Remove the pork from the oven and allow to rest for a few minutes. Slice the pork diagonally, spoon over the cooking juices and serve with lovely chunky chips, ketchup, mustard and green beans.
