Fig, Cranberry & Goat's Cheese Crostini

 

  

Ingredients: 

  • 1 baguette 
  • 4 tablespoons  olive oil 
  • 225g (8 oz) soft  goat's cheese 
  • 4 figs, sliced
  • basil leaves, shredded 
  • 20 teaspoons Roots & Wings Organic Cranberry Sauce with Orange & Spices 

Method:

Makes 15-20

Start by preparing the crostini. Preheat the oven to 180C / 356 F / Gas Mark 4.  Slice the baguette into 2cm (1 inch) slices and arrange on a baking sheet. Use a pastry brush to lightly coat both sides of each piece of bread with olive oil. Bake the slices for 3-5 minutes checking every minute or so, until they are golden brown. Remove from the oven and allow to cool. These can be put in an air tight box and kept for a day or two.

Just before you're ready to eat the Crostini, spread a thick layer of Cranberry Sauce over the toasted baguette, follow on with a generous layer of goat's cheese. Top with a slice of fig and sprinkle over the basil leaves. Repeat until all your ingredients are used up.
