Method: Preheat the oven to 180C/350F/Gas 4. First make the croutons. Slice the baguette into small bite size rounds. Drizzle the olive oil onto a baking sheet. Dip each slice of bread into the oil so that they are coated on both sides. Arrange on the oiled sheet and put in the oven for about 15-20 minutes until brown. Remove from the oven and leave to cool on a wire rack. These can be made a day ahead and stored in a sealed plastic bag. When ready to serve, heat the oven to 180C/350F/Gas 4. Spread each crouton with the Pear Fruit for Cheese. Add a generous teaspoonful of goats cheese and warm in the oven for about 5 minutes. Remove from the oven, top with half a teaspoon of Cranberry Sauce with Orange & Spices. Serve with drinks as a nibble. |
