Bee Pollen Granola Bars



  • 300g (11 oz) oats
  • 85g (3 oz) pumpkin seeds & sunflower seeds mixed
  • 85g (3 oz) honey
    40g (2 oz) light brown sugar
  • 1 tsp water
  • 40g (2 oz) butter, cut into pieces and melted
  • 1/2 tsp vanilla essence
  • A pinch salt
  • 85g (3 oz) mixed dried fruit
  • 1 tbsp Roots & Wings Organic Bee Pollen  


Put oats and seeds in a large mixing bowl.
In a separate bowl, mix the honey, sugar and water and melt in a pan over a gentle heat, stirring frequently to prevent the mixture caramelising. Once it’s melted, add the vanilla essence and remove from the heat.
Add the honey and sugar mixture, the dried fruits and the salt to the oats and seeds and mix well. Stir in the melted butter and mix thoroughly.
Spoon the mixture in a 20 cm x 20 cm (8 inch x 8 inch) baking tray and spread it out so that it covers the tray. Sprinkle the top with bee pollen and press down firmly with a spoon.
Leave to cool and once it is cool place it in the fridge to harden. When it is hard cut into pieces.
