Strawberry Jam Tarts

Strawberry Jam Tarts recipe from Roots and Wings Organic 


  • 250g (8oz) organic plain flour
    Pinch of salt
  • 100g (4oz) organic butter, cut into cubes and quite soft, plus some for greasing
  • 2-3 tbsp cold water
  • Roots & Wings Strawberry Jam ( or Roots & Wings Lemon Curd)


    1. Whisk the egg whites until they become slightly firm.
    2. Slowly add the sugar until the mixture forms firm peaks.
    3. Spoon 1 tsp of the Roots & Wings Beautifully Smooth Lemon Curd onto each biscuit. Spread it over the biscuit, leaving a ½ cm (1/4 inch) gap around the edge.
    4. Pipe the meringue mixture onto each biscuit.
    5. Bake in a 160°C (320°F, Gas Mark 3) oven for 20 minutes. If you wish to toast the tops place briefly under the grill but watch them carefully.
